HelloFresh Meal: creamy pea and asparagus risotto

I made the creamy pea and asparagus risotto from HelloFresh tonight for dinner. I’d give it an A. It’s meaty and filling (after the first bite Bob asked if there was more, but was full after the first helping), and crazy flavorful. I really appreciated the step-by-step, but it took me way longer than the recipe said it would. Recipe said an hour all told, and I clocked about 90 min. I absolutely am a slow cooker though – lots of chatter and refilling the wine. I relish the experience so sometimes it takes me all evening. NO APOLOGIES.

Everything out of the bag. Ignore the bastard walnuts.

Chop onion

Mince garlic

Chop asparagus

Chop mint
image
Heat stock to a boil

Once boiling, blanch asparagus

Set asparagus aside

Tbs of butter, medium pan

Saute onions and garlic until soft (smells good)

Add risotto and push around until getting translucent

Like 30 min later, adding stock in 1/4 cup increments until absorbed.

When risotto is almost done toss in your asparagus, peas, half the mint and half the goat cheese

I really appreciated that I had no waste when I was done. I had the right amount of asparagus and mint. I didn’t have ten more onions wondering what I was thinking (15 months later). And no left overs to ignore! 10/10, would make again. Creamy, tangy, it has veggies, definitely filling.
